I loved this episode of the Lady Gang podcast, featuring Erin Foster (fast forward to 19:50 if you don’t care to listen to the whole pod). Like most of the internet, I can’t stop obsessing over Foster’s Netflix show, Nobody Wants This. It’s fascinating hearing about how she wrote the show, the process of getting it made, and especially how she’s balancing being a new mom with all of her success. A fun and inspiring listen, and if you haven’t watched the show…go binge it, now.

Our whole household enjoys this for breakfast and it is so easy to throw together. I’ve made it with sausage and cheese and also a vegetarian version with broccoli and cheddar. *Chef’s kiss*
One of my 15 month old’s current favorites. Great for breakfast or a snack on the go! They also freeze so easily and then reheat in the toaster or microwave.
Transparently, I’ve made these twice before and my daughter is yet to take a liking to them…but I’m determined and giving it another try this week. I thought they were delish and ate them as a side with my lunch. (We wouldn’t be moms if we didn’t eat our kid’s food rejects, am I right?!)
