I hope you’ve been having a ton of spooky and sweet fun this week with your littles! For a halloween party, my daughter wore a cat costume that my godmother made for me in the ‘90s. It’s both incredible, and mind-boggling, to see your child wearing or playing with something that belonged to you when you were their age. We have a few other festive outfits in the lineup for today and tomorrow, —a vintage Gap princess dress that was my sister’s, and a Dr. Seuss Thing 2 costume. Our cat is dressing up as Thing 1, against his will, of course. (The seasonal Things books are a consistent fave around here.) I’ve loved this meal since I was a little kid. Such an easy, hearty dish perfect for this time of year, and the best part is that it’s one of my toddler’s favorite foods, too!
A mom friend (Hi, Cait!) shared this recipe with me when our babies were just starting to eat solids, and it still remains in our family’s weekly rotation. I usually double or triple the recipe so there are plenty to freeze for the rest of the week.
It’s hard to tell if my daughter enjoys eating soup or saying ‘soup’ more. But this recipe is hands down a favorite. Its silky, smooth consistency is delicious, and it can be dressed up with a variety of toppings for the adults. I prefer the roasting method for a richer flavor vs. the stovetop instructions, but both methods turn out delish.
